Menu Plan Monday #53

And……. I fail at blogging again.  This past weekend was a big success.  I drank almost a gallon of wine, watched some fireworks, and attended solstice service ran by Megan at her Unitarian Universalist Church.  It was a lot of fun!

The rest of the time I’ve been reading, going to the gym, spending time with the family, and preparing for Alaska.  Only 8 days remain until we leave!  I have so much left to do; I don’t even know where to start.  I guess I’m starting by becoming a huge ball of stress.

It’ll be worth it in the end, though!  I just have to remember to breath.

Enough about that, though.  It’s time for this week’s menu plan.  We ended up being so busy this past weekend that I did not cook.  I pushed some things forward and moved the rest around.  This will probably be my last week of menu planning until after our vacation!

  1. Butternut Squash and Black Bean Chili
  2. Beef and Bean Tacos
  3. Barbecue Ribs with Cheesy Tomato Grits
  4. Leftover Ribs with Mashed Potatoes and Peas
  5. Clam Chowder
  6. Parmesan Chicken with Potatoes and Green Beans
  7. Maple Dijon Chicken with Potatoes Gratin

I’m excited about the barbecue ribs.  I made some AMAZING roasted strawberry barbecue sauce, based off this recipe, last week.  I cannot wait to actually cook with it!  I also bought some amazing hot sauce at the wine festival.  I’m going to do some awesome stuff with that while Trinity is in Maine!  Yum!

      I’m excited, but also really nervous that I’m not going to get everything done before we leave… or I’m going to forget to do something really important.
