Menu Plan Monday #23

I’ve been on a Holiday Crafting binge.  I have a lot to get accomplished, and I’m hoping to have it all done by the end of next week.  I’m pretty happy with everything so far, and I cannot wait to start sharing everything with you guys!  I’ve been taking photos, so those posts can start soon.

Anyway!  Last week’s menu ended up getting messed up.  We had pizza one night.  I made enough soup to last two nights, so half of that is frozen for later this week.  The amount of leftover turkey is unreal.  Daniel’s work gave him a 20 pound bird.  So, I have some of that frozen for this week and next.  That means there’s still lots of turkey on the menu, and some of these are pushed back from last week.

  1. Turkey Soup (stock, turkey, corn, onions, peas, potatoes, sweet potatoes, squash, and noodles)
  2. Turkey and White Bean Enchiladas (adapted from this recipe)
  3. Turkey Noodle Casserole (adapted from this recipe)
  4. Crock Pot Chicken Tacos
  5. Pork Chops with Macaroni and Cheese and Broccoli
  6. Sweet Potato and Black Bean Quesadillas
  7. Chicken and Rice

I even squeezed a meatless meal in there!  I’m doing pretty well with this challenge.

In other news:  My doctor still hasn’t called with my ultrasound results, and I am really anxious and annoyed.  I’m keeping myself busy with the crafting, but how long does it take to look at an ultrasound and decide if there is something in my uterus or not?!?!  Ugh.

I’ll probably give them a call soon.

  1. Everything sounds great, and I’m a little jealous of your awesome menu planning, but I really wanted to comment and say “Omigod! I have no idea why it takes specialists, especially gynecologists, SO LONG to look at test results and then get back to! NOTHING IS CHANGING ON THAT PAPER!!!!!!!!!”

      Thanks! It’s hard sometimes, but menu planning definitely makes the week easier! I got sick of doing the ‘omg, what do I make tonight’ every day. It forced me to feed my family crap. We eat well now, haha.

      Doctors are awful. I’ve been to too many of them in the past few months. It really does take them forever, but this time it turned out that the imaging place sent the friggin ultrasound results to the wrong doctor. I’m so annoyed. I was playing phone tag today with the doctor and the imaging place for so long, but I finally got it straightened out and confirmation that the doctor’s office has the results. Now I wait for the doctor to look them over and call me back. Ugh. So annoying!
